Probably like most people Queen Victoria's favorites changed over time. She lived to a respectable old age for her times.
We do know she preferred librettoes from Light Italian Opera, some songs of Wagner, and Rossini and Mendelsohn. Her favorite however seems to have been Shubert tunes which the regimental band of the Life Guards would play during dinners.
Her granddaughter Queen Marie of Romania recounted a charming story. A special performance of Bizet's Carmen was played at Windsor Castle. Marie recalls sitting next to the queen and watching her face beaming with pleasure during the performance. After it was over Victoria turned to her granddaughter with a grin on her face, leaned over and hiding their faces with her fan delightedly whispered "I am afraid she's really not very nice."
The queen's tastes weren't all highbrow. In her later years one of favorite songs was an 1882 song by an American composer which seemed to extol
the good life American slaves enjoyed on the plantations of the Old South.
It was called "Happy Darkies Workin in the Field." It was a rollicking tune, and the queen would beat time to it with her fan or tap her fingers on the table.
I suspect however that if one could have held the queen to her most favorite it would have been one of the lieders or songs composed by her beloved husband, Prince Albert. The two would sing and play duets of them on the pianos at the many royal residences.
