In reality, a person can pray for any saint that they would like to on All Soul's or All Saint's Day. Traditionally, people prayed for saints who did not have their own special day already allotted to them. People also tended to pray for specific saints, such as those that are of their church, town, family, or of the same name.
November 1 is All Saints Day, and November 2 is All Souls Day. All Saints is when we celebrate all those who have entered heaven and are now Saints. All Souls Day is when we pray for All Holy Souls who are still suffering in Purgatory. Heaven is commonly referred to as the Church Triumphant, Purgatory is the Church Suffering, and here we are in the Church Militant.
The first of November is All Saints Day in which the church celebrates all the saints who have not been canonized but are in heaven. The second day of November is All Souls Day on which we pray for all departed souls in purgatory.
Halloween was originally All Souls Day or All Saints Day. The Church still celebrates it as All Souls Day.
Filipinos celebrate the feast of All Saints Day for the same reason all Catholics celebrate it - to honor the thousands and thousands of unrecognized saints in Heaven whose names are known only to God and who have no individual feast day as do the named saints. They celebrate All Souls Day to honor and pray for the souls of those who have died and may be in Purgatory awaiting entry into Heaven.
All souls bread or cake was made from whatever grain was available. it could be wheat, flour, rice, ect. It was the bread given out to the poor. It was believed that the poor would pray for your family that was stuck in purgatory. The more bread given out, the more people that would pray for the souls of the departed.
