The US most certainly does have $1 coins. A "Native American" dollar coin carrying a stylized depiction of Sacajawea has been minted since 2000, and a separate series featuring images of all former presidents (except those currently living) has been produced since 2007. Use of the coins has been limited due to political pressure to continue co-circulation of paper $1 bills and minimize use of $2 bills.
The Australian one dollar coin features the "Five Kangaroos" design and the New Zealand Dollar features the portrait of HM Queen Elizabeth II on one side and a design of four fronds of the silver fern centered by the Kiwi.
Canadian $1 coins feature a loon (waterbird) on the reverse (hence the nickname "loonie") and of course HM Queen Elizabeth II on the obverse.
