The companions of Prophet Muhammad wrote the sunnah after he died. When Prophet Muhammad was alive,his followers and companions memorised the sunnah by heart as he performed them. Few years after Prophet Muhammad died,people started forgetting the sunnahs of the prophet so they wrote it down.
Sunnah means the ways of the prophet and his relatives (wives, for example.. pbut). Hadith are written down - they contain the sunnah (ways of the prophet pbuh). The hadith were not written down until after the Prophet Muhammad (pbuh) pasted away from what I have learned. Before that, they were passed on orally. The Prophet Muhammad reportedly said not to record his sunnah in written form and scholars believe this is because he did not want people to confuse his words with the words of God... however, Bukhari (one of the hadeeth collectors) noticed that many people began to make things up and associate them with the prophet (pbuh)... upon noticing this, he decided to devote much of his life to obtaining all the hadith he could possibly obtain and put them in written form... he was careful to include all his sources and noted which hadith are "sound" or from an unbroken chain vs the ones that were not.

The Sunnah, or Hadith, dates back to the time of Prophet Muhammad, he ordered his companions to keep it and write it, so as not to get lost, but gave that order to a minority of people, and soon prohibited them from writing it, to avoid mixing up with the Quranic scripture.
then around 80 Hijri, Imam Albukhari [from Bukhara, Khurasan, Iran nowadays], found that time has come for someone to start collecting the Hadith between the covers of a book, and so he did..
The Holy Prophets ( pbuh ) companions wrote the ahadith so that they could be used as guidance for the generations to come, these people were known as scribes of divine revelation.

Bukhari whos book sahi bukhari is considered to be the 2nd best guidance for mankind it gives most ( if not all ) of the sahih hadiths in it

Muslim
