It tends to come down to evolution and what niche the tree is trying to fill. Generally fast growing trees are weaker than slow growing trees.

The strength of a tree is created by the Lignin and cellulose in its cells.

because they get more water

Edit : WRONG. They grow tall NOT to get water. If it was to get water, the height of the trees will not matter.

The reason they grow tall is to obtain sunlight. In forests, the trees grow tall to get sunlight as the canopy of forests which refers to the extent of the outer layer of leaves of an individual tree or group of trees will block the sunlight ( the canopy is formed by mature tree crowns ). Without sunlight, the plants cannot photosynthesise.

No photosynthesis = No food
