A weak hot spot in the Earth's mantle pushing magma up making a giant mountain like structure. And if the lava flows enough it could make the cooling lava into rock forming an island like Hawaii's islands.

Volcanoes barley grow by lava hardening in layers but that is how they grow. They are formed by a tectonic plate moving over a hot spot producing a volcano (as how the Hawiian islands were formed). There is also another way! They can also form when magma inside the earth's surface or molten rock erupt from an opening in Earth's surface or called crust or lithosphere. The eruption can also be very small still to form a volcanoe.

As a volcano erupts it adds layers of lava and ash to itself making it grow in size. An exception would be the explosive eruptions as those eruptions tend to destroy part of the volcano itself.

Martian volcanoes were able to become so large because there's no plate tectonic activity on that planet. Earth's plate tectonics cause volcanoes to become disconnected from their source of magma, after which the volcanoes don't grow anymore.

There are a number of things that make volcanoes to grow larger. This may be through intrusion of magma which forces the volcano to expand like a balloon or extrusion where the magma erupts and the volcano grows on the earth's surface.

There are two reasons for this. First, Mars has weaker gravity than Earth does, allowing higher mountains. Second, Mars does not have plate tectonics. The volcanoes on Mars likely form over hot spots, as do some of the volcanoes on Earth. Volcanoes at Earth's hot spots get carried away by moving tectonic plates, which limits their growth. The volcanoes on Mars stay in place and so can grow for much longer.

well..... basically when the volcano errupts again and again the small and big particles come together to form layers of rock or hardened lava. these layers buid up so making it bigger.
