I think you mean breeds because all common cattle are the same species. Just like all dogs are the same species. Actually I guess there are a couple species but they are so closely relatted that they can breed with each other.
And like dogs different breeds have different qualities. Holstein produces the most milk. Some breeds are smaller and better suited for smaller farms. Jersey cows are kind of small but produce a good amount of milk that has more cream.
Some breeds have thick skin like the Brahmin from India. They are often bred with other kinds in places with lots of biting insects and hot weather. Some produce more tender beef or grow faster. So there are a lot of reasons and a lot of breeds.
need to know what species you are asking about to answer the question. gestation rates are different for different species. ie cow- 9 months, dog 63 days
A donkey and a cow are two different species. They cannot produce offspring. If a donkey were to persue a cow, it is a form of dominance behavior. He cannot sire calves or foals from the cow.

No. They are different species and incapable of reproduction. Although some species can breed with other species, like a cow and a bison, they need to be closely related, usually the same genus to reproduce. Hamsters and gerbils are not close enough to do so. But they would have adorable babies if they could breed!
