People, like you, say that technology is only modern technology. So the truth of the matter is: Amish people DO use technology. But if you're trying to ask why they live as though it were the 1700s, then that's just because of their religious beliefs. The consequences for an Amish if they use MODERN technology is that their whole family will 'shun' them. This is when they pretend they are not there.

That's an incorrect generalization. The Amish are known for simple living, plain dress, and reluctance to adopt many conveniences of modern technology. Many, but not all. Most Amish will use an inside flush toilet or a motorized washing machine. The Amish anti-individualist orientation is the motive for rejecting labor-saving technologies that might make one less dependent on community. Modern innovations like electricity might spark a competition for status goods, or photographs might cultivate personal vanity. Electricity lines would be going against the Bible, which says that you shall not be "Conformed to the world."
