Glycogen is the storage form of glucose in animals and humans which is analogous to the starch in plants. Glycogen is synthesized and stored mainly in the liver and the muscles. Structurally, glycogen is very similar to amylopectin with alpha acetal linkages, however, it has even more branching and more glucose units are present than in amylopectin.

Starch can be separated into two fractions--amylose and amylopectin. Natural starches are mixtures of amylose (10-20%) and amylopectin (80-90%).

Actually, glycogen is a starch if you define starch as a long strand of glucose molecules. The only difference is that in plants the glucose strands can be very very long, such as that seen in fiber, so much that we cannot digest it. Glycogen strands are far shorter, so that they can be used more quickly by the body. In addition to that, glycogen is highly branched and is therefore more compact than regular starch. Storage space is not an issue for plants since they are stationary. Animals, on the other hand, move and need to be small. Hence, the difference in storage materials.

Starch is a molecule in plants used as a storage of glucose or energy for later use. When animals digest starch they break it down into glucose monomers and used for energy. In terms of a starch equivalent in animals, fat is used to store energy as starch is in plants.

Glycogen is called animal starch because it is similar in chemical composition to the starch. Both have α(1--4) glycosidic linkage, both are branched and serve as the reserve for energy source glucose. The only difference is that glycogen is more profusely branched than starch.

In plants, sugar or glucose is stored as starch where as in animals it is stored as glycogen. For this reason, glycogen is sometimes called animal starch.
