Stalingrad was a large city, with over a million people living in it. It's difficult for an army to capture such a large city in a short time, especially in Russia in the winter- Russian winters are notoriously fierce. So the Germans bogged down while the Soviets fought hard to resist.
At the same time, the Soviet successfully brought other armies around the sides to surround the German forces. The armies guarding the German sides were from other countries like Romania, Hungary, and Italy- and these armies weren't quite as good as the German ones. The Soviets were able to sweep them aside and encircle the Germans. The Germans tried to keep fighting despite having Soviets on all sides- Hitler insisted that his forces never surrender, and tried to have airplanes drop supplies to his starving, freezing soldiers.
After about three months of encirclement, the Germans were forced to surrender. The Germans lost a major part of their military, and the Soviets finally started an offensive to fight back against the invaders.
