The Israelites didn't flee to Egypt; they traveled in an orderly manner with livestock, the elderly and infants, etc. The reason why they went there was because there was a famine in the Holy Land. Genesis ch.45-46.

The Israelites were slaves for what is estimated around 400 years. They were in Egypt by way of famine (the story of Joseph, the son of Jacob being sold into slavery by his brothers and then being used and positioned after interpreting the dreams by the power of God for Pharaoh, as the 2nd to Pharaoh in command).
Their mindset after 400 years of captivity was that of slaves. They were treated harshly to say the least but they had "stability/routine," established communities on the outskirts of the city (Goshen), they had provision as Egypt was the major metropolis of it's time, many of them according to The Bible, although raised as Hebrews believing in the promise of God, turned to Idolatry because that was the norm to the culture in which they were enslaved to who were a polytheistic society. They had "visual gods."
When they were led out of Egypt by Moses, through the power of God it was all miracles, all power, all excitement, but approximately a month in, the honeymoon was over. They had to believe God, the one true God for all of their provision, which HE was faithful to deliver, but it was a place of "just enough," and not all of the variety they once seemed to remember.
They no longer had man made gods to look at but had to trust a God that was too Holy for them to look upon and would meet with Moses at the top of a mountain. They were typical "slaves" having to learn how to be "free" having to really walk out their faith, trust and take initiative to inherit the promised land.
They wanted everything delivered at the doorstep and yet they didn't want to be told what to do.
Because of famine (Genesis ch.46).It was part of God's plan, since Egypt would be the "iron furnace" (Deuteronomy 4:20) in which the Israelites would be smelted, removing the dross, and would grow into a nation ready to receive God's Torah. See also:
