This is a common marking known as full mask. If your betta's head isn't usually black but it has gone black, it's probably a bacterial or fungal infection. I can't make an accurate diagnosis without a photo and some history, but generally fungus will appear fuzzy (and more often white than black) while bacteria might look slimy or like the skin is fraying away.
