My 2000 does it. The slave cylinder rod gets some corrosion around the rubber boot, just enough to cause it to stick when pedal is down all the way, especially after a few days not driven. Easiest fix is a slave cylinder kit, they are pretty cheap.

There is no adjustment on this clutch. The clutch is hydrolic, you may need to bleed it.
