I'd start with the thermostat. Make certain that you have plenty of coolant and that the radiator isn't blocked.

the water jackets are different , the motor will keep running hot
if i remember correctly the dummy light should turn on by atleast 211 degrees or more

A motor is always going to be hot to the touch because when it is running it is very hot and takes awhile to cool down after it is shut off. If an engine is hot to the touch, it just means it was recently running.
The coil temperature will rise a little when the engine is running, but if it's getting too hot that's generally an indication of damage to the coil or that the coil is wired improperly.
