VHS tape machines used an analogue system of recording onto tape. There are a few of these still available, but are rapidly drying up.
Recorders with hard drives operate similarly to regular recorders, only that they convert the sound and/or video into a digital format and record the digital format to the hard drive. They operate the hard drive similarly to how a PC would use it. They might use hard drives that don't have error correction to improve the speed.
They are only important if you want to record things. A lot of people are happy just playing videos.

Well, kinda. The Ampex VR-1000 was first made in 1956 and it was about the size of a piano, BUT: a) it wasn't a Video Cassette Recorder (VCR) because it didn't use cassettes. Instead, these early Video Tape Recorders (VTRs) used large reels of tape that had to be loaded into the recorder's mechanism by hand. b) it wasn't actually the first video recorder, but it was the first successful one. The BBC tried to invent one and so did RCA, but these early recorders did not work very well and could only record a few minutes of video.
VCRs do NOT process digital signals, analgue is the only language they understand. Therefore, you need to place before the VCR a device that has a digital tuner plus the ability to convert digital signal to analogue. Examples of such devices are a cable / satellite set-top box, a digital to analog converter box (the converter box ONLY works IF your digital TV feed is coming from an over-the-air TV antenna, not through underground cable), and a stand-alone DVD disk recorder "with a built-in digital tuner". Whichever tuner plus converter device you have, connect either S-Video or Composite Video AND RCA (red and white) audio output of the device to the input sockets of your VCR. Make sure that whatever "types" of video and audio connections you make are available on both ends, as output on your tuner/converter device and input on your VCR.

Either Sony or Olympus are two affordable and efficient brands of audio sound recorders. These two brands have very great reviews and seem to be the only two brands that produce sound recorders.
