Carbohydrase breaks down carbohydrate into simple sugars.

Amylase is produced in both the mouth (in saliva) and the pancreas (pancreatic amylase). Amylase breaks down starch molecules in your food into simple sugars. Pancreatic amylase hydrolyses an remaining starch molecules in the pancreas into simple sugars.

There are many, many other types of enzymes that catalyze almost every reaction that goes on in a human body.
