There are reported Allergies to hedgehogs.

If animal dander is what you have a problem with, hedgehogs produce so little of it people don't have reactions. They do sometimes have problems with their bedding, where the dander accumulates.

However, it is much more common that people are allergic to the quills themselves, or that the quills push irritants shallowly into the skin, causing a reaction.

Firstly I would like to point out that you should not use head and shoulders on your gerbil or business on your rat. A healthy gerbil should have no visible dandruff they she'd their dead skin cells just like us and any animal but it is not visible. To keep your gerbils coat healthy keep their bedding clean, I usually clean mind out every 7 weeks but it friend on your gerbils cage size. I would also recommend if you do not already, that you give them sand baths twice a week, buy chinchilla sand (not dust) and give it to them in a dish 3 inches full for about 10 minutes. You can reuse the sand a couple of times if they use it as a toilet remove the soiled sand immediately and you can still reuse it.

No. All gerbils are pretty much the same, as far as fur goes. They've only been kept as pets for thirty(ish) years, so breeding for different varieties is still relatively new.
