I'm not sure if this is true or not but I think that it turns green from it being in the light or in the sun. for example if your making mashed potatoes and you put your potatoes on the window sill and there is TONS of light and you leave it there for five hours cuz you forgot and you saw it and it's green than that's probally cuz of too much LIGHT NOT DARK. I hope it's right.

Well, the green on a potato is not mold, but a toxic molecular structure called "solanine." Solanine is a poison, which can make consumers ill, very ill, or worse. Pregnant women should be extremely careful to avoid any potato that appears green anywhere on skin or below the potato skin. When we're talking about potatoes: If it's green, it's mean. I am assuming you mean potatoes that have turned green on the peel , usually that means the potatoe has been exposed to to much light, they will turn green, this must be completely removed when peeling the potatoes, then cook as usual.
