Quail breasts are considered more of a combination of white meat and dark meat. Dark meat refers to the areas on a bird that get the most movement/exercise, such as the wings and legs. That is because with so much movement, the blood flow is heavier in these areas, and they typically have more fat. White meat refers to the areas used less, especially in flight, which is the breast area. However, because Quail are so much smaller, their breast muscles get more of a workout, thereby increasing the blood flow, but not as much as the legs and wings. Which is why they are considered a combination (the only bird listed as a combination).
