It is traditional to eat fried foods on Chanuka, due to the fact that the festival marks a miracle that happened in the Jewish temple period. Following the destruction of the temple, a clean up mission was started to restore the temple to it's former glory.
A small amount oil was found to burn the lights of the 'menorah', a biblical candelabra in the temple. This then burned for seven days, rather than the expected one day, giving enough time for more oil to be produced.
Given the miracle of the oil, it is tradition to fry food in oil.
Donuts are traditionally eaten on Chanuka, as well as Latkes, which are also known as 'potato pancakes', when in fact, they are not panckaes at all. These are more like hash browns that are fried as individual patties.
Latkes are made by grating potatoes and onions, adding salt and pepper to taste, and egg to bind, then fried until golden brown.
Special foods include potato pancakes (latkes) and jelly donuts (sufganiyot). Also, any foods fried in oil are traditional.
There isn't anything that could be called a "Hanukkah Dinner" though.
