It was a stylistic choice made by Tim Burton. Those who are familiar with his movies know that his movies are often dark and focus more on greyscale colors. Whenever he includes blood in his movies (Edward Scissorhands, Sleepy Hollow and Sweeney Todd: The Demon Barber of Fleet Street) he likes the blood to contrast with the overall color in the movie. So the bright red blood adds a more dramatic and graphic effect.Also Johnny Depp is actually afraid of blood so it kinda had to be unrealistic so he wouldn't flip out.
Felidae is rated R for its graphic scenes containing blood and horror. This is definitely not a kid movie even though it is animated.
Yes there is a filter. It removes blood and gore and swearing and scenes with knives or torture, and it takes out all the scary bits like the russian rolette.
