There are many thousands of endemic plants in New Zealand - probably in excess of 10 000.
Theere are a great many waterfalls in New Zealand, as the terrain is generally not flat and most areas get reasonable to high rainfall. Therefore there are many streams and rivers that run over several abrupt changes in level, creating waterfalls.

By and large, water is not a scarce commodity in New Zealand. In some dry areas, farming pressures do deplete the local aquifers, but that is not a large scale problem. some dry areas would include quite a bit of Canterbury, and Marlbrough. In some seasons, the Wairarapa may consider they have a drought, bit I've never heard of significant aquifer depletion there. Most of our electric generation is from hydro-electric dams.
