Current UK regulations for commercial kitchens is that all food is heated up to a core temperature of at least 75C and maintained(held) at a temperature of above 65C. Pork is notorious for causing food poisoning if incorrectly heated. For sliced ham I'd suggest cooking in oven with a little boiling stock for AT LEAST 15 minutes. Serve ASAP from time taken out or simmer on hob until ready to serve.
A precooked ham is already cooked and needs only to be heated to a desired temperature, if it is wanted to serve it hot. As a precooked item, it can be sliced and served cold.
Since the ham is already fully cooked, you only need to heat it up to the desired temperature which takes about ten minutes per pound. Oven at 350 degrees. 160 degrees is the serving temperature for ham served on a plate. Sandwich slices of ham, spiral sliced hams for example, are good hot or cold, so you can knock that cooking time down to 5-7 minutes per pound for ham sammies.
Nope, you only need to put it in the oven to heat it through. Or, you can just eat it cold.
It is not necessary to cook a pre-cooked ham. A pre-cooked ham is good at room temperature, so you can leave it set out for an hour before serving. However, if you do decide to heat up your pre-cooked ham, just make sure you wrap it in tin foil, and watch it closely because you don't want your ham to dry out.
A good rule is to cook until the internal temperature is 165 degrees or more.
Ham should be good 4 to 5 days refrigerated.
For pre-cooked ham, you need an internal temperature of 140 degrees F. For a non pre-cooked ham, you should cook it until the internal temperature reaches 160 degrees F.
For an uncooked ham the temperature needs to be 160 degrees. Personally, I find that removing the ham from the oven when the temperature reaches 155 degrees, and letting the ham rest for 15 minutes produces a better product. The internal temperature will rise the extra 5 degrees while resting and allows the juices to become more evenly distributed. If the ham is partially or fully cooked, the internal temperature need only be raised to 135 - 140 degrees.
to cook a 10 pound sliced lee ham it will take roughly 3 and 1/2 hours with the temperature set to about 425
This is a difficult question to answer, sliced ham should not be soft and mushy, so it is perhaps better not to eat it. However if the ham has been cooked properly and stored in a cool place since being cooked (and if it is from a shop, is still within is use by date) it should be OK to eat. It may be that it had too much water in it when it was packed. On balance however if food does not look OK, is out of date, has not been stored at the correct temperature and certainly if it smells bad - it is safer not to eat it.
How long do I cook a precooked ham? It is 15 lbs. A precooked ham does not have to be cooked, but will taste better if you heat it thoroughly to an internal temperature of 140°F (60°C) or so. Place the ham in a 325°F oven (163°C). It will take 12 to 15 minutes per pound for a whole or boneless ham and 18 to 20 minutes per pound for a half ham.
Pork...shaved ham is just ham sliced thin.
