Remove the thermostat, and you throw the computer system into a tizzy! Install the correct thermostat for your vehicle and leave it in.

Sounds like a classic bad thermostat, stuck open. The thermostat closes and opens to keep the car engine at the optimal range, no matter what the outside temperature is. If the thermostat is always open, the radiator does too good of a job at keeping the engine cool. The radiator and cooling system is designed so you can drive your car through a hot desert, so it has a lot of extra capacity. Replace the thermostat, this should do the trick. very low-tech problem.
At best a lower temp t-stat. should only be used as a TEMPORARY fix while you track down the actual cause of the overheating issue. I would check to make sure your cooling fan is coming on, the flow rate of the radiator to rule out blockage and the water pump to make sure it is circulating the coolant.

This assures that the engine is operating at a specific temperature. Engines are far more efficient when operating at a higher temperature... so long as it isn't TOO high. Without a thermostat, the coolant constantly circulates through the radiator and cools as much as the radiator will allow.
