It depends on how they've been cooked - for example, they may have been fried in pork fat and in that case will definitely not be suitable for Jews. Beef fat - as I believe is the case with McDonald's fries - is acceptable provided the cow was slaughtered according to shechita laws which govern how an animal should be killed if its meat is to be kosher (I have no idea whether or not McDonald's use kosher fat - I very much doubt their meat is kosher as shechita meat is more expensive than meat slaughtered in the non-kosher industrial way and fast food chains like to cut costs). If the have been fried in vegetable oil and contain no animal products at all then they are parve - that is, neutral, meaning that kosher laws do not apply and they can be eaten. Fries do not need to be salted with kosher salt to be kosher - any salt (which is a mineral and therefore parve) will do. Kosher salt is simply salt used to kasher (remove blood from) meat, the name does not mean that the salt is any more kosher than any other salt.
