It is allowed to do this. However, that doesn't mean it is the most ethical. In some cases, the employer will take money out of the manager-on-duty's paycheck to compensate.

No. Your employer can neither take your tips (or any part of them), nor deduct money from your wages because of the tips you earn. Furthermore, your employer cannot credit your tips against the money the employer owes you. Labor Code Section 351
No, an employer cannot take money from your paycheck unless it is for an employee benefit. There may be a lag time between when the insurance is cancelled and the payroll deduction stops, if the premiums were paid in arrears.

If your employer offers its employees the option to invest in a 401K, you would be very wise to take it. Many employers also offer matching funds as a way to encourage employees to save for retirement. If you contribute five percent and your employer will match half of that, that is just like getting free money every paycheck. In addition, the money is taken from your paycheck before any taxes are applied.
An employer cannot legally withhold funds from a paycheck (tender for your services rendered to, and on their behalf), unless you consent/authorize them to do so, there is a legal garnishment/lien in place through the court, or elected voluntary deductions such as 401K. If the employer withheld funds outside of the aforementioned exceptions, you do have legal recourse.
No one takes unemployment insurance out of a paycheck. That money for the insurance is paid by the employer, not the employee. The correct amount depends on the size of the company.
You can only take money out of their paycheck if you have a contract about being able to do this. The employee must agree to this beforehand.

Yes. Best thing to do is make good enough payment arrangements than have them take your money that way. The bank will send your employer a court order to garnish your wages. And they will do that until paid in full.
