As a person who suffers from celiac, processed foods are a problem for me be cause hydrolized protein and modified food starch can sometimes be other names for wheat or gluten. Also wheat and or gluten is often added as a thickener or binder in all types of unexpected foods such as salad dressing, ice cream and vitamins or prescriptions.

That is one of the symptoms to Celiac Disease but when you figure out you have Celiac Disease then it will go away. You will not be able to eat wheat which caused the diahrea. But, if you start eating wheat/gluten again the diahrea will come back.

From having friends with celiac disease,, I would say yes. Since potatoes are a starch and not a gluton like wheat, it is fine. I would just be leery if the potatoes are breaded or battered since many of those will have a flour base.
