Oil is oil for the most part and can be interchanged. Ghee is going to have a different flavor and depending on what is being cooked, it might make a slight difference, but nothing too drastic. Olive oil is also going to have a different flavor. If it is something that Grandma has made for years and is going to taste it, she might notice, but I doubt most people will have any clue.
