Technically you can, but I could only find of two possible deaths from a medical paper in 1948, discussing the kidney damage from poison ivy. At that time, cortisone was just being discovered. Now, you could get medical care that would stop the allergic reaction.

Serious attempts to develop resistance to poison oak and poison ivy were conducted between 1974 and 1982. Clinicians fed leaves, rubbed leaves on skin, and injected and fed liquid extracts of the plants to volunteers. Nobody died or became very ill, but most had allergic reactions resulting on a small or overall itchy rash. Many folks became tolerant from the studies, but if they didnt continue being exposed to the plants, the allergy slowly came back in a few months or so

If you put poison oak in your mouth, you might get blisters, but the mucus membranes are protective, and some folks don't. It can cause gastrointestical problems, and at the anus where it comes out, you might get a rash. You can also get a rash all over your body from eating a leaf.
