Can the cable TV provider tell if you have more then 1 TV hooked up?

At this point, I don't think so. The output of the cable box isn't generally monitored. Besides, it shouldn't really matter to anyone, in my opinion. You're buying the service itself, and should have the right to split it up to as many TV's as you're able.

Channels are different in different locations, even with the same cable provider. Call your local cable provider and ask them. Their website may tell you, if you put in a ZIP code to tell them where you live.

Depends on the receiver. Some models have just a pass thru feature and connot decode the audio portion of the HDMI signal, and therefore will need a digital audio cable to get sound. Some receivers can decode the audio, so you will need to consult your manual to see what they say. If you need a audio cable it will tell you.
