Vinegar is dilute acetic acid (CH3COOH) while Baking Soda is Sodium Bicarbonate (NaHCO3). An acid and a base. Mixing the two results in the following reaction:

CH3COOH + NaHCO3 --> Na+CH3COO- + H2O + CO2
