A wireless network can be extended with a Airport express unit. Apple has a support page explaining the set up (See links below). An Xbox 360 can simply connect to this wireless network or you can probably arrange the set up to use an Ethernet connection.

The Extreme will not play music. It will connect to a printer and hard drive. The Express has 10/100 Ethernet so is best for a small system. If you already have an Airport Extreme Base Station and your Express is used simply to either extend your network range or to use the AirTunes function, then yes you may plug directly to the Express to connect to the internet although the purpose of the Express is to be able to access the internet wirelessly. However, if you do not have an Airport Extreme Base Station and are using only the Express to connect to the internet, then you may not connect to the internet by using an Ethernet cable and plugging into the Express. This is because if you are using the Express to connect the internet, the ethernet plug will need to be plugged into your modem.
The quick and easy way to add an Airport Express to an Airport Extreme network is to use the AirPort Express Assistant which is on the disc that came with the Express. This will talk you through the options. Just tell it to connect to your existing network and it will figure it all out for you. It will ask for your Extreme's password and then automatically configure the Extreme to use the Express. Restart the Express and you are done. If you prefer to get your hands dirty use the Airport utility which is in the Utilities folder within the Applications folder. Allowing for different versions of Mac OS X/Airport utility you generally select your Extreme base station and then WDS (Wireless Distribution System) options. Click the + button to add to the network. Enter the MAC address for your Express. Turn off Distribute IP addresses on the Network. You want to allow the Extreme base station to be a Remote base station.

The iPad does not have an ethernet cable port, however it does have a Wi-Fi chip to allow it to connect to wireless networks. One possible option is to use a Wireless access point (the $99 Airport Express from Apple can be set up this way and is particularly portable). These are meant to create a wireless network from a wired one, nowadays most have routers built in but you should still be able to get one as a stand alone device.
