Sure you can. But you probably should tone down any additional salt, as old bay is basically just seasoned salt. Your Alfredo will obviously have a unique flavor but I bet it would be great with a little crab or shrimp added to it since old bay is great with shellfish!
Dilution of the sauce w/ the stock your using is the quick answer.. However Old Bay contains a fair amount of flake salt that enhances the spice.. i would use some fresh squeezed lemon or lime juice. Again if you aren't to concerned about the consistency just add stock, (unseasoned chicken/ fish/ or crab). bob
