Yes you can. The amount of time directed on the turkey for cooking time will need to be extended by 1 hour at 350. Most people put a little bit of water in the botom of the pan so you would have to add less water to compensate for the water left in the turkey.

Stages are so long, that even if they start in the morning they don't finish until well into the day.
Absolutely, the parkarized finish helps hold the oil. If you don't apply oil it will eventually rust. I usually spray the finish with CLP (you can buy at Walmart in the gun section). Let it dry overnight and wipe off the excess.

12 miles is about 20 kilometers. If you don't have to carry overnight gear(tents, sleeping bags ASO) it should be doable in a day, depending on terrain, climate, and and your fitness level of course. Don't expect to have much daylight left when you finish, and don't expect to be able to do much else during the day than to keep walking. If it was me I'd probably plan it as a day-and-a-half. Start from the morning, do 8-9 miles at a relaxed pace, camp out, and be done by lunch day 2.
