Bonefish can be eaten. I have personally eaten them boiled and baked on many occasion as a young mam growing up in Sandy Point, Abaco, Bahamas. If given a choice I would prefer to have it baked.. The head is removed and the fish is then split along the dorsal fan the neck to the tail . three or more splits are added to each side. After cleaning it is then place in a pan scale side down. The seasonings are then added. Salt, black pepper, onions (sliced) making sure that it gets into those splits on both side. A can of tomato paste is added after mixing with a little water to soften baked for about one hour .With the dinner rolls you would have a meal to remember after adding a little pepper sauce before you start to eat.
The boiled one the fish is cut into two inch chunks cleaned, seasoned and placed into a covered pot to steam for about twenty minutes. One to two cups of water added then boiled for about half hour. Your pepper sauce and dinner rolls comes in handy for this dish as well. Most Bahamians would have a slice of johnny cake instead of dinner rolls. The tourists that visit my home to catch bonefish only wants a photo of the catch. They release all their catch back into the water after a photo opt.
