Currently the Xbox 360 and pocket editions of minecraft are behind/have less feature than the PC version. J4 studios are working very hard to get as much into the xbox 360 version as they can.
Also please be aware that there are hardware limitation with the Xbox version so expect the next gen consoles and even the PS Vita version to contain more and have bigger worlds.

You can't. This is because the version of the Minecraft Xbox 360 is different from the PC Version.
