If you plan to use the canned food to make something that should remain cold, pre-chilling it in the fridge is a good idea; for instance, tuna for tuna Sandwiches or canned fruit to use in Gelatin desserts or canned cranberry sauce to serve with turkey.

Long term refrigerated storage might not a good idea since the high moisture of a refrigerator could cause the cans to rust.

Yes, although there is no particular value in doing so. Food canned properly will not readily spoil (although it should be used before the "use by" date, refrigerated or not). But do not freeze canned food; the water-based liquid will expand when frozen and stretch or burst the can. Also consistency of the food will be harmed.

Sure, but they will also be fine at room temperature.

Just never put canned goods in the freezer as the cans will burst when the contents freeze.

If you leave a can that has been opened overnight and a can that is not open overnight which will be heaver?

This might depend on a) what is in the cans b) how accurate the scales are If a can with liquid in it is left open overnight some moisture may be lost by evaporation - making it slightly lighter than the unopened can. If a can is open, some particles of dust might drift into it - more than would settle on an unopened can - and make it slightly heavier than the unopened can. However, If the can has nuts in it I'll be tempted to take one or two, or a handful - making it considerably lighter than the unopened one.
