First you have to make sure your ipod touch (im assuming) is on iOS 5. Then when you go into your photos app and there should be a button that says Add or Edit. Click on that and it will give you the option to make a new album.

Place all the images you wish to put into your iPod into a folder. You may have sub-folders as well. Run iTunes and under the source list, select your iPod. A summary about a iPod will appear and under the tab "Photos", check "Sync photos from:" and select the folder you have put your photos into. Also, do note that your iPod must have a colour screen, examples of such iPods are the iPod Nano and the 5.5G iPod. iPod Shuffle does not have a screen, so obviously you cannot view photos. iPod Mini and other iPods with monochrome screen cannot view photos as well.
