As long as it has not spoiled, it is safe to use fudge that has been stored. Many people store fudge in their cupboards.
To remove fudge from a pan, you can line the pan with parchment paper before pouring in the fudge mixture. Once the fudge has set, you can simply lift it out of the pan using the parchment paper. Alternatively, you can also use a knife to loosen the edges of the fudge from the pan before turning it out onto a cutting board.

If the fudge is very dry, check by tasting to be sure it isn't stale. If it's okay, spread it out in one layer and give it a very fine - and very brief! - mist with a plant-spray. Cover with a paper towel and leave until ready to eat. Or you can cover the layer of fudge with a damp paper towel and leave until it's sufficiently moistened. If the fudge is only slightly dry, put in a layer as above and cover with cling-film until you wish to eat it.
