From the Jewish perspective, a person born to a Jewish woman is a Jew. That person can convert to a different religion and if they do, they're seen as being cut off from the Jewish Nation. However, if they choose to return to Judaism they aren't required to convert, they just have to make 't'shuvah' (repent and return to Judaism).
