In some sense you usually can, although brown sugar is normally added into recipes because it gives a more creamy, caramel flavour. Perhaps you could add a small amount of vanilla essence as well.

Brown sugar has quite a different flavor than granulated sugar which would not be appropriate for all baked products. It also has more moisture than granulated sugar, which is why it does not pour in the same way and needs to be "packed" for correct measurement.
