Spray the muffin pan with non-stick spray. Break an egg for each opening, (or for how many eggs you want) Sprinkle with salt and pepper. Careful not to break the yolk unless you don't like runny eggs.

Bake at 350 degrees for 15 minutes, or until cooked to your liking, checking every 5 minutes - Take out of oven and let sit for 5 minutes to help eggs set up.

You can also make mini omelettes. Just break eggs in a bowl as if you are making scrambled eggs. Pour eggs evenly into tin openings. Add whatever omelette ingredients you like. Bake as above

you might be able to if you used big muffin tins but the meringue would probably spill out of the pan.
