The overdrive should be switched off when you want to avoid unneccessary shifting. If you are driving on a hilly road, the vehicle will shift out of overdrive going uphill to maintain speed while pulling the vehicles weight up the hill, and shift into overdrive going down the hill to save fuel when additional engine power is not needed. When towing with an automatic transmission, the vehicle may tend to repeatedly shift in and out of overdrive due to the added weight. In scenerios such as these, you should turn off the overdrive to avoid the unneccesary shifting which puts more wear and tear on the transmission.

Overdrive is always on by default every time you turn on the engine, even if last time you drove you turned it off. Given that Mazda does this, I believe it is their intention to use overdrive all the time. However, there are times I would turn it off. This would be when going up and down small hills where the transmission has to constantly change gears. It has to downshift when going up hill, and upshift going down hill. To minimize how many times it has to go in and out of overdrive, I turn it off on those kind of drives. Also, when towing a heavy load, I recommend turning it off, since it is not designed for the extra load.

If you are not towing anything for sure disengage the overdrive on an A/T. On a manual 5 speed put it in 4th, or 3rd, or 2nd, or even 1st gear depending on how steep the hill is and how fast you want to go.
If you are driving a loaded tractor trailer, you would downshift to gain more power when going up hill and downshift to control speed when going down hill.

Its a old button for a certain gear. Say you are in overdrive but going up a hill and you need to down shift, hit that button and the car will automatically downshift until you release that button. The same thing applys as when going down a hill, you will want to keep the car at a lower gear so not as to use the brakes as much. It will slow you down automatically.
