Remove all the hoses and wiring harnesses connected to the engine.
just to name a few radiator hoses, power stering hoses, throttle cable, fuels lines, injector harnesses, AC (be careful this is a pressurized system)
After everything is disconnected from the engine itself support the transmission, and remove the bell housing bolts.
Remove the starter and then through that hole remove the transfer case bolts by turning the flywheel.
Now the fun part remove anything that might be in the way, coolant reservoir, then support the engine and remove the front upper engine mount.
Connect the cherry picker to the motor and lift slightly, separate the tranny from the engine using a pry bar or similar (if it doesn't want to come check that all the bell and transfer case bolts are out)
Disconnect the lower engine mount and lift slowly very slowly to make sure that you didn't miss any connections. From here just lift slowly and maneuver the engine out its a tight fit but it comes out angled slightly up on the passenger side.

Well yes and no. Both have a 2.2 four cylinder if I'm not mistaken, but I don't think the earlier Cavalier's have the EcoTec motor. And you should be able to get the engine from the '03 into the '97 with no problem.
