For a gay man, the most common stereotype would have to be the very sassy and effeminate type. For lesbian women, it would have to be the very masculine "Butch" type. And I guess another common stereotype would be the gay/lesbian person who hits on every guy/girl they see.
Sometimes it pretty obvious. And sometimes its not. The real answer is that you can't easily tell unless the person is working hard to identify with the gay/lesbian community and is wearing signature clothes and deliberately behaving in such a way as to broadcast to the world that he/she is gay/lesbian. Such behaviour is common enough in gay/lesbian neighbourhoods and major cities, but in conservative places gay/lesbian people can be quite invisible.

Not necessarily. The pressures of the society that women live in often make them very self-conscious about their body. It's very common for women to be envious of other women they perceive to be "better equipped". It may be that you are obsessing with the size and shape of your own breasts. That doesn't make you a lesbian. Having romantic and/or sexual feelings about a woman is what makes you a lesbian. If you are a lesbian, then you will inevitably fall in love with a girl; then it will be plainly obvious.
If you mean 'Are you lesbian if you liked girls for 7 years?' then, not technically. If you still like girls, then yes. Some people changed their sexuality over time, it's sometimes a common thing with some people.
