Good question. Scalloped potatoes in a 9X9x2 inch pan take about an hour and a half. Your pork roast cooking time depends on its weight. Best to look up the recommended cooking time per pound. The recommended "done" temperature for port has recently been reduced. You can eat pink pork! Not bloody--but pink.

It is not necessary to do so. Depending on how big the pork roast is, you may want to put foil over it for the first 3/4 of the cooking time (to prevent dryness), removing the foil for the last 15 minutes or so, just to brown the meat. But if it's a small pork roast it makes little difference whether you use a baking bag, or foil, or just leave it uncovered (it won't be cooking long enough to make it dry).

You would use the cook time for the individual loin as it accounts for the size and thickness of the cut of meat. As long as you maintain the proper temp as recommended for your smoker the cooking time will be the same for multiple loins as it would be for a single loin.
Cooked meats, well wrapped, are best used within 3 months of freezing. The pork loin may keep longer than that but the freezing dries out meat and affects its texture and quality when thawed and reheated.

The ultimate pork loin recipe would go like this. First preheat oven to 475 degrees. Your looking at 2 hours and 15 mins to complete. Prep take about 10 mins, inactive time 20 mins and to cook 1 hr 45 mins. You will need one 4 lbs pork loin, 1 tbl spoon of salt, 2 teaspoon olive oil, 2 cloves minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of basil and 1 teaspoon of rosemary. To prepare u will mix all ingriediants and then massage them on loin. Then you will roast loin 30 mins and then reduce heat to 425. When finished let stand 20 mins, carve and serve.
Pretty much any pork can be grilled nicely. A tenderloin is a large piece of meat and will take time. Depending on you schedule, nice pork chops might be a better choice and can cook more quickly.
