Bad thermostat maybe?
Your truck is overheating because it needs a new radiator. I had the same problem, after I installed the new radiator and flushed out my remaining cooling system I never had a overheating problem since.
Air not properly purged out of the cooling system, bad electric cooling fan switch(s) in the block, bad connections on the block fan switches.

The air conditioning is a separate system from the cooling system and will not be affected by overheating, however if the overheating problem is associated with an inoperative cooling fan or a blockage in the air flow through the radiator and evaporator then the system will not cool properly.
