Avery and his colleagues used enzymes to provide evidence that proteins were likely NOT the genetic material. That proteins did carry the information was a prevailing hypothesis at the time. And other experiments in their work provided contrasting evidence the DNA was likely the chemical holding genetic information. They never said they had proved DNA carried genetic information, they merely provided evidence supporting the now widely accepted hypohesis (for most biological systems).
