They wanted access to the Suez Canal. Once they took control of Egypt they could took control of Egyptian government. Then without anyone to hold then back, they heavily taxed the Suez Canal because it was the fastest rout for Europeans to get to India and China. If it wasn't for the Suez Canal, then the merchants would have to go all around Africa. An easier way to understand this would be to look at a map. The Suez canal is where there is a small bit of land connecting Europe and Africa, but there is also ways for boats to get through.
