Rice pudding imported from the Middle East became popular in the middle ages. Custard was also invented during that time . However most puddings were meat based. the people ate only a fraction of the Sweet thing that are consumed by modern man.

Since sweet potato originated in Central or South America and the americas were not discovered until after the medieval period, it is impossible for anyone in medieval Europe to have eaten them. The same applies to all foods from the Americas: potato, tomato, sweetcorn, chocolate, squash and so on.

Yes they did, but it was different from the ice cream now. They had to put lots of salt in, so the ice cream would stay cool.
